A brewed cup of coffee is over 98% water, so it should be no surprise that the water you use changes how it tastes. Yet water is the most overlooked variable in home brewing. People upgrade their beans and grinder while pouring in whatever comes out of the tap — and then wonder why their coffee tastes dull, chalky, or strangely flat. Here is why water matters and how to fix it without overcomplicating your life.

Water is an ingredient, not a solvent

It is tempting to think of water as a neutral carrier that simply pulls flavor out of coffee. It is not. The minerals dissolved in water actively participate in extraction. Some minerals help grab and dissolve the flavor compounds in coffee; too few and the cup tastes empty, too many and it tastes harsh. The composition of your water sets the stage before the coffee even gets involved.

The minerals that matter

Two factors do most of the work: total dissolved solids (TDS) — the overall mineral content — and hardness, mainly the calcium and magnesium in the water.

  • Too soft / low mineral — water with very few dissolved solids lacks the minerals needed to extract flavor well, producing flat, hollow, lifeless coffee.
  • Too hard / high mineral — excess minerals create chalky, bitter flavors and accelerate limescale buildup that damages kettles and espresso machines.
  • Magnesium in particular is associated with brighter, more complex extraction, while calcium contributes body but drives scale.

What the standards recommend

The Specialty Coffee Association publishes target ranges for brewing water, which give a useful reference even if you never measure precisely. As a guide, the SCA points to a TDS around 150 ppm (within a roughly 75–250 ppm window), calcium hardness in the tens to ~175 ppm, modest alkalinity, and a roughly neutral pH near 7. The practical takeaway is not the exact numbers but the principle: you want water with some minerals, but not too many, and a balanced rather than extreme profile.

Practical fixes at home

You do not need a chemistry lab. Match the fix to your tap water.

A few cautions: pure distilled or reverse-osmosis water on its own tends to make flat coffee because it has almost no minerals, and not all bottled waters are suitable — some are very high in minerals. Consistency matters as much as perfection; brewing with the same water every time makes everything else easier to dial in.

Bottom line

Water is an active ingredient: its mineral content drives extraction, and both too-soft and too-hard water ruin good coffee in opposite ways. Aim for moderately mineralized, balanced water in the spirit of the SCA targets — filter hard tap water, avoid plain distilled or RO, and pick a consistent source. Get the water right and the same beans and grinder you already own will suddenly taste like the upgrade you were looking for.
