Ultrasonic Espresso: Could Sound Waves Change How Coffee Is Brewed?
Researchers are brewing espresso-strength coffee with sound waves instead of heat. We break down what the lab studies actually show, the energy and taste claims, and whether ultrasonic brewing is coming to your kitchen.

Espresso has been pulled the same way for over a century: push hot, pressurized water through a compacted puck of finely ground coffee. So when engineers start talking about brewing espresso-strength coffee with sound waves instead of heat, it is worth slowing down to understand what is actually being claimed — and what it might mean for your morning cup.
What the research actually showed
The headline work comes from a team at UNSW Sydney's School of Chemical Engineering, led by Francisco Trujillo, with results published in the Journal of Food Engineering in 2026. The researchers converted a portafilter basket into an ultrasonic reactor: a transducer clamped around the basket injects high-frequency sound into the wet coffee bed. Those waves create acoustic cavitation — microscopic bubbles that collapse violently against the grounds, fracturing them and accelerating how fast flavor and caffeine move into the water.
The practical result is striking. Using room-temperature water (around 22°C), the rig produced an espresso-strength brew in roughly 2–3 minutes, reaching an extraction yield of about 18%, which sits at the bottom of the Specialty Coffee Association's commonly cited 18–22% target range.
Energy, taste, and the cold-brew angle
Two findings stand out. First, energy: brewing without heating water cut consumption dramatically in the team's measurements — on the order of 75% less than a comparable conventional pull, since most of an espresso machine's energy goes into heating and maintaining water temperature.
Second, taste. In untrained consumer tastings the researchers reported no significant differences in aroma, flavor, bitterness, or overall liking between the ultrasonic brew and a conventional espresso. Earlier work from the same broad research effort also showed ultrasound could produce a cold brew in minutes that testers struggled to distinguish from a 24-hour steep — a process that normally takes most of a day.
Why "no heat" matters
Heat does two jobs in brewing: it speeds extraction and it shapes flavor by pulling out different compounds at different rates. Removing heat usually means slowing everything down, which is exactly why traditional cold brew takes 12–24 hours. Cavitation appears to substitute mechanical energy for thermal energy, getting extraction up to speed without cooking the coffee. That is interesting for delicate aromatics, which can be driven off or muddied by high temperatures, and for ready-to-drink and concentrate products where consistency and speed matter at scale.
Will you have one in your kitchen?
Probably not soon. This is laboratory work on a retrofitted machine, not a consumer product. The article notes that earlier commercial attempts at sound-assisted brewing are no longer actively sold, which is a useful reality check: promising lab results do not automatically survive contact with cost, durability, noise, and cleaning demands in a home appliance. Ultrasonic transducers add expense and complexity, and a kitchen device has to be quiet, safe, and easy to maintain.
Bottom line
Ultrasonic brewing is a genuinely interesting line of research, not a gimmick. The credible claims are narrow but real: comparable extraction and taste, much faster cold brew, and lower energy when you skip heating water. What it is not — yet — is a product you can buy. If sound-wave espresso ever lands in home machines, the first wins are likely to be speed and energy efficiency rather than a dramatically different flavor in the cup. For now, treat it as a sign of where coffee engineering is heading, and keep dialing in the gear you already own.
